Space will feed our future

I believe that research and innovations in the space sector will help accelerate the creation of nutritious, delicious, sustainable and equitable food systems here on planet Earth.  
I see a lot of innovation in food, and being so closely involved with future food innovations daily, one of my biggest pet peeves is food being developed for sustainability reasons while completely ignoring nutrition.

The beauty of the space sector is that nutrition cannot be ignored. It is deadly if so. The space environment is not only harsh, requiring the best of the best in food innovation and using food as ‘medicine’ (a countermeasure), but its constraints are perfectly placed to prioritise nutrition and taste while connecting to the underlying principles of food as culture and as joy.

MISSION MUSHVROOM

Mission MushVroom is the first study to cultivate and fruit oyster mushrooms in space and the first to investigate mushrooms as a crop. Oyster mushrooms are the perfect space crop, helping astronauts meet their nutritional needs on long-duration space missions like those to Mars, while closing the loop in plant agriculture and helping to minimise inputs and waste. They are quick to grow, double in size every day, and have nutrients found across food groups, including the unique ability to make vitamin D on UV exposure- the only supplement currently given to astronauts on the International Space Station.

Successfully growing edible mushrooms in space can revolutionise the space food sector and bring us closer to delicious, nutritious and sustainable space food production for future missions on the Moon, Mars and spaceship Earth.
